Soak the beans overnight. Drain them, place in a pan, cover with fresh water and bring to the boil over a medium heat. Cook for about 45 minutes-1 hour until tender, then remove from the heat and set aside for 30 minutes. Drain well. 2. Heat the oil in a large saucepan over a medium heat, add the onions and bacon and cook for 6-8 minutes. Stir in the garlic, tomatoes, sugar, vinegar and 400 ml water then tip in the beans. Reduce the heat to low and cook for 1-2 hours, stirring occasionally, until you have a thick sauce and tender beans. Serve the beans on toasted bread with grated cheese, if you like.

Coltunasi It’s essentially tortellini, with fillings like potato, ground meat (which is called pelmeni, if you speak Russian) or a soft cow’s cheese, except they usually put onions sauteed in oil and sour cream on top instead of tomato sauce or the like. My host mom would rarely make coltunasi because she was either busy with her job as a nurse, taking care of the kids, taking care of the animals (which included ducks, chickens, pigs, a cow and nutria), or she was working in the garden, busily ensuring we had potatoes, onions and peppers to eat throughout the rest of the year. I would offer to help her make the coltunasi, hoping she would realize that if there was an extra pair of hands it would be easier and she’d make them more often. It didn’t really work; all I ever got to do was seal the edges of the coltunasi and arrange them on a tray before they went into the boiling water. Ciorbă de perişoare Ingrediente: • aproximativ 300 g carne tocată • o mână de orez, cam 100 g • condimente de tot felul: cimbru, piper, sare • 2 cepe mari • ardei roşu • 3 cartofi potriviţi • 2 morcovi • zeamă de varză sau borş acru • leuştean pentru aromă Mai întâi trebuie pregătite chifteluţele amestecând carnea tocată cu un pic de orez şi condimente. Uneori poate fi adăugat un ou dar nu e obligatoriu. După ce carnea e pregătită, tăiaţi legumele, dar mai întâi puneţi la fiert într-o oală ardeii şi morcovii tocaţi. Când legumele sunt aproape fierte, luaţi carnea şi faceţi perişoare de mărimea unei nuci. Când sunt gata, adăugaţi încă o mână de orez, cam 150 g, în funcţie de mărimea vasului pe care-l aveţi. Turnaţi puţin ulei, cam 4 linguri, ca să fiarbă, adăugaţi sos de tomate şi zeamă de varză sau borş acru şi lăsaţi să fiarbă bine. Când e gata adăugaţi condimente, luaţi de pe foc şi puneţi deasupra leuşteanul tocat. Poftă bună!
